"Miracle" Home Remedy Recipe

I had quote a few questions and in-boxes about the vinegar, honey and garlic photo from the recent Instagram post...no, we don't put the ingredients in the actual juice...it's actually a separate concoction to help boost immunity and the ingredients naturally contain tons of other health benefits.

Here is the recipe:

1 cup Organic Apple Cider Vinegar
1 cup Raw Organic Honey
1 bulb Organic Garlic (all cloves separated & peeled)


Place all ingredients in a blender (we use NutriBullet) and blend for 60 seconds, then pour into jars and let rest in the refrigerator for 5 days. Once ready add 1 tablespoon to an 8oz glass of warm water and drink every morning before eating anything.

Old-Fashioned Sour Cream Doughnuts

Old-Fashioned Sour Cream Doughnuts

1 cup self-rising flour
1 1/4 cup cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup sugar
2 tablespoons butter, at room temperature
2 large egg yolks
1 teaspoon vanilla
1/2 cup sour cream
Canola oil, for frying

IN A BOWL: sift together both flours, baking powder, salt, and nutmeg.

IN THE BOWL OF A STAND MIXER (fitted with a paddle attachment): beat the butter and sugar together until sandy. Add the egg yolks, vanilla, baking powder, salt and nutmeg and mix until light and thick. Add the flour in three separate additions, alternating with the sour cream, ending with the flour (1/3 of the flour, 1/2 of the sour cream, 1/3 of the flour, the other 1/2 of the sour cream and  finally add the rest of the flour). The dough should be a little sticky, but not super sticky or wet. Wrap the dough with plastic wrap and chill for ONE hour.

ON A FLOURED SURFACE: roll out the dough to about 1/2 inch thickness. Use a doughnut cutter or two differently sized biscuit cutters to cut out as many donuts as possible, dipping the cutters into flour as necessary to prevent sticking. You should get about 12 doughnuts and holes.

HEAT OIL: Pour 2 inches of canola oil into a heavy bottomed pot, with a deep-fry thermometer heat oil to 325°F. Fry the doughnuts a few at a time, being careful not to overcrowd the pot. Fry on each side about 1 minute (the will be quite crispy on the outside and fluffy on the inside). Let drain on a paper towel or wire rack and glaze.

GLAZE INGREDIENTS

3 1/2 cup powdered sugar
2 teaspoons corn syrup
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/3 cup hot water
1/4 cup unsalted butter

IN A SAUCE PAN ON LOW HEAT: Mix all ingredients with a whisk until smooth and butter is melted. Place on a wire rack above a sheet pan to catch any excess glaze, and generously drizzle glaze over the doughnuts. Doughnuts are best served the day they are made but may be store in an air tight container at room temperature 3 – 5 days. Enjoy with morning coffee, or as a dessert with vanilla ice cream!

Easy Chocolate Truffles


20 oz              Semisweet Chocolate
8 oz                 Heavy Whipping Cream
1 tbsp             Unsalted Butter
1/4 tsp            Kosher Salt
2-3 tbsp          Amaretto, Orange or Almond Flavored Liqueur
1 c                   Cocoa Powder for coating


In a double boiler melt chocolate, heavy cream and unsalted butter, stirring slowly until smooth. If using a sauce pan, place heat on medium-low to melt the mixture carefully not burn.

Remove from heat then stir in the salt and liqueur. Cool mixture and chill for at least 2 hours or until firm.

Using a small ice cream scoop (about 1 inch in size, or a small spoon), scoop the mixture into balls and gently and quickly shape with hands (chocolate will met with your body heat, so work quickly) and then roll truffles in the cocoa powder.

Kids Camp December 2013

...these kiddos did an awesome job on everything, and they were so funny.  Parents comment: "Chef Diedra, you have the patients of a saint...thank you!" I've never seen parents drop off kids so fast, but can totally understand a nice little break right after the holidays

today's kids culinary passport was to Europe - our little chef's made Homemade Linguine, Homemade Marinara Sauce, rolled Meatballs and made Chocolate Banana Crepes for dessert

Ginger Teriyaki Glazed Salmon

Family Style Dinner  Ginger Teriyaki Glazed Salmon, Grilled Asparagus and Smoked Cheddar Mac N' Cheese with Smoked Truffle Salt & Spanish Paprika 

Cocoa Espresso Avocado Mousse


Ingredients:

1 Large Ripe Avocado (peeled and pitted)
1/4 c Cocoa Powder
1/4 c Raw Agave Nectar
1/4 c Coconut Milk
1 tsp Vanilla Extract
1/2 tsp Espresso Powder

Method:

Place all ingredients into a Nutribullet, Ninja, food processor (or blender), blend until smooth...and enjoy!


PUMPKIN SPICE ACNE MASK


















Ingredients:
2 tablespoons Pumpkin Puree (or Canned Pumpkin)
1 tablespoons Greek Yogurt (plain)
1 tablespoon Raw Organic Honey
1/8 teaspoon Cinnamon

Directions:
Mix all ingredients until smooth.  Apply to face (avoiding eye areas) and leave on for 15-20 minutes. Rinse with lukewarm water.

PUMPKIN is packed with fruit enzymes and alpha hydroxy acids (AHAs), Vitamin A and C to help to prevent the signs of aging, Zinc in pumpkin seeds is brilliant for acne.
YOGURT contains Lactic Acid that help to hydrate and sooth the skin, leaving it soft and smooth.
RAW HONEY contains gluconic acid, and a mild alpha hydroxy acid that can brighten complexion, even out skin tone, and lighten scars and age spots.

CINNAMON has antimicrobial properties that can help clear mild to moderate acne and even the skin complexion.
