oz Semisweet Chocolate

oz Heavy Whipping Cream
1
tbsp Unsalted
Butter
1/4
tsp Kosher Salt
2-3
tbsp Amaretto, Orange or Almond
Flavored Liqueur

c Cocoa Powder for coating
In
a double boiler melt chocolate, heavy cream and unsalted butter,
stirring slowly until smooth. If using a sauce pan, place heat on medium-low to
melt the mixture carefully not burn.
Remove
from heat then stir in the salt and liqueur. Cool mixture and chill for at
least 2 hours or until firm.
Using
a small ice cream scoop (about 1 inch in size, or a small spoon), scoop the mixture into balls and gently and quickly shape
with hands (chocolate will met with your body heat, so work quickly) and then
roll truffles in the cocoa powder.
