Bacon Wrapped Mini Red Potatoes





Added the grilled method for Summer. Happy Independence Day!

What’s in it?
24 small new potatoes
12 slices bacon, cut in 1/2
24 toothpicks

How it’s made:

Preheat grill to low heat, and lightly oil the grate. (Oven Method: Preheat to 350 degrees)

Wash potatoes thoroughly and dry with paper towels.

With clean hands wrap each potato with a piece of bacon and secure with a toothpick.

Place the wrapped potatoes on the grill, turning the potatoes several times to allow the bacon to cook on all sides. (Oven Method: place wrapped potatoes on lined sheet pan and lightly cover with foil, no need to turn bacon)

The potatoes are done when the bacon is fully cooked and crispy, about 20 minutes. (Oven Method: same as grill method, but when done remove foil and turn oven to broil and crisp bacon for about 5 mins, just until bacon is crisp)

Homemade Sriacha Ranch

What’s in it?
1 cup mayo
1/2 cup sour cream
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
2 tablespoons Sriracha

How it’s made:
In a large bowl, whisk together all the ingredients. Cover and refrigerate for 30 minutes before serving.
